Job description

Key responsibilities
- Prepare and execute dishes to a consistently high professional standard
- Take responsibility for the efficient operation of an allocated kitchen section
- Prepare Italian dishes using appropriate commercial cooking techniques
- Work with premium seafood, meats, fresh pasta and seasonal Australian produce
- Complete daily mise en place and preparation requirements
- Maintain consistent food quality, presentation and portion standards
- Assist with menu development, tastings and seasonal menu updates
- Coordinate effectively with senior chefs and other kitchen team members
- Maintain efficient workflow throughout preparation and service
- Assist in supporting and developing junior kitchen team members
- Maintain food safety, hygiene and cleanliness requirements
- Follow professional kitchen procedures and workplace standards
- Communicate clearly with the kitchen brigade during busy services
- Contribute to a positive, disciplined and collaborative kitchen culture
- Continue developing culinary knowledge and technical skills
Requirements
- Relevant commercial cookery or hospitality qualification, preferably Certificate III in Commercial Cookery
- Approximately 1–3 years of commercial kitchen experience
- Previous experience preparing Italian cuisine
- Genuine hands-on professional kitchen experience
- Ability to provide evidence supporting previous employment and qualifications
- Strong English communication skills
- Understanding of commercial kitchen operations and food preparation procedures
- Ability to manage an allocated section effectively
- Strong organisational and time-management abilities
- High attention to detail and consistency
- Ability to work calmly and efficiently during busy services
- Professional attitude and strong work ethic
- Ability to work cooperatively within a structured kitchen team
- Genuine commitment to long-term culinary development
- Fine-dining, hatted or premium restaurant experience is highly regarded
- Fresh pasta preparation experience is highly regarded
- Seafood preparation and cookery experience is highly regarded
- Experience with premium meats and seasonal produce is highly regarded
- Candidates must be able to demonstrate the authenticity of their stated work experience and qualifications
