Key responsibilities
- Lead and train chefs and kitchen hands; keep the culture positive
- Build and cost modern Australian menus for bistro, bar and events; plates stay consistent
- Plan event catering with the functions team: prep, staff, timing
- Handle buying, stock, food costs, labour and waste against budget
- Keep food safety, hygiene, allergen and WHS standards tight; cook in service and stay calm under pressure
Requirements
- Head Chef or Kitchen Manager experience in hotel dining plus high-volume functions or banqueting
- Cooking skill, sound money sense and the ability to handle busy services and large events together; a clear, practical communicator who develops the team
- Certificate III in Commercial Cookery; Food Safety Supervisor certification
