Job description
Head Chef wanted to run two busy venue kitchens on the Gold Coast.
This is a full-time Head Chef job in Gold Coast, QLD, Australia. The venues are a grill house doing smoked barbecue, steaks and burgers, plus a 1920s-themed lounge serving tapas and hosting private events. You report to the Executive Chef.

Key responsibilities
- Create menus for both sites, including seasonal specials, while watching cost
- Manage, train and motivate sous chefs, cooks and kitchen hands
- Supervise prep and cooking on the grill and smoker; work the line at peak times
- Check quality, flavour, plating and portions on every dish
- Enforce food safety, hygiene and allergen rules; keep the kitchen clean, organised and safe
- Control ordering, stock and storage to cut waste
- Track food and labour costs against budget
- Prepare rosters for lunch, dinner and late nights
- Run functions, banquets and private events, coordinating with front of house for on-time service
- Follow new trends and techniques
Requirements
- Proven Head Chef, Sous Chef or Kitchen Manager experience
- Certificate III in Commercial Cookery, a culinary arts qualification or equivalent formal training
- High-volume, fast-paced kitchen background
- American-style BBQ, smoking and premium steak grilling (highly desirable)
- Proven control of food and labour costs against budget
- Strong ordering system, stock control and supplier management skills
- Functions and banquet catering experience, plus solid food safety and allergen management knowledge
- Fit for physically demanding work: long periods standing, heavy lifting
- Flexible availability: evenings, weekends, public holidays
