Job description

A premium Queenstown hotel needs a Sous Chef to co-lead one kitchen team serving several restaurants and bars.

The role is Sous Chef, based in Queenstown, New Zealand, paying $37 per hour. It is permanent and full-time, with at least 40 hours a week. The hotel is mid-makeover. Key responsibilities

  • Run food production for all hotel outlets.
  • Approve every dish before it leaves the pass; keep quality top tier.
  • Check prep, stock rotation and mise en place on each section before service.
  • Watch the roster so no section is short.
  • Delegate to junior chefs; jump onto any station to prep, cook and plate.
  • Hit food cost goals with tight ordering, par levels and rotation; reduce waste and spoilage.
  • Recruit, train and develop cooks; keep the team productive and positive.
  • Keep the kitchen clean, safe and hygienic: WHS, food safety and hotel grooming rules.
  • Coordinate with the F&B Manager, outlet supervisors and front of house.

Requirements

  • Must have a relevant trade qualification (e.g. Certificate in Cookery Level 4 or equivalent) OR a minimum of three years' relevant work as a Sous Chef or senior chef in a similar kitchen.
  • Proven multi-outlet kitchen management in a premium hotel or restaurant.
  • Strong technical cooking skills; high standards held on every service.
  • Track record leading, training and developing kitchen teams.
  • Confident running day-to-day kitchen operations.
  • Good grasp of food costing, stock control and kitchen financial targets.
  • Current Food Safety certificate plus full working knowledge of WHS in a commercial kitchen.
  • Available for a rotating roster: evenings, public holidays, weekends.
