Key responsibilities
- Sous Chef
- Assist with managing daily kitchen operations
- Work alongside the Head Chef to coordinate kitchen service
- Lead and motivate kitchen team members
- Maintain consistent execution of the menu
- Take ownership of an allocated kitchen section
- Organise mise en place and preparation requirements
- Provide effective shift handovers
- Assist with coaching and developing junior kitchen staff
- Contribute to new dish and menu development
- Monitor ingredients and stock usage
- Assist with inventory and food cost management
- Coordinate section ordering requirements
- Maintain food safety and workplace safety procedures
- Complete temperature and compliance checks
- Keep the kitchen area clean and organised
- Promote strong teamwork and professional workplace standards
- Senior Chef de Partie
- Take ownership of an allocated kitchen section
- Prepare and execute menu items consistently
- Complete mise en place before service
- Maintain clear handover information
- Follow instructions from senior kitchen management
- Assist with developing junior kitchen team members
- Support training of less experienced chefs
- Assist with dish development and preparation
- Monitor ingredients and stock requirements
- Assist with ordering and inventory control
- Maintain hygiene and food safety standards
- Complete required compliance procedures
- Maintain a clean and organised workstation
- Communicate effectively with the kitchen team
- Manage multiple responsibilities during busy service periods
- Bartender
- Prepare bar areas for service
- Complete opening and closing procedures
- Prepare cocktails and serve wine and beer
- Maintain consistent beverage service standards
- Serve beverages promptly and professionally
- Monitor and replenish bar stock
- Participate in stock counts
- Complete keg changes when required
- Maintain clean and presentable bar facilities
- Complete cleaning and temperature checklists
- Process customer payments accurately
- Prepare coffee when required
- Respond appropriately to guest enquiries
- Report customer concerns to the Duty Manager
- Communicate low-stock requirements promptly
- Servers
- Welcome and assist guests throughout their visit
- Provide attentive food and beverage service
- Maintain detailed knowledge of menu offerings
- Explain dishes and ingredients to guests
- Seat guests and follow established service procedures
- Monitor guest requirements during service
- Escalate concerns to the Duty Manager
- Maintain clean and organised tables
- Process payments accurately
- Identify suitable opportunities for additional sales
- Complete required cleaning procedures
- Follow responsible alcohol service guidelines
- Work collaboratively with kitchen and front-of-house teams
- Cellar Door Assistants
- Welcome guests and deliver professional wine tastings
- Build strong knowledge of wine products and offerings
- Explain wine selections and tasting experiences
- Prepare the tasting room for service
- Complete opening and closing duties
- Maintain a clean and welcoming environment
- Process customer transactions accurately
- Maintain product displays and stock levels
- Assist guests with enquiries
- Promote appropriate products and experiences
- Conduct group and private tastings when required
- Assist with tours and special events
- Work towards personal and team sales objectives

Requirements
- Sous Chef
- Minimum 3 years' experience in a similar senior kitchen position
- Relevant culinary qualification or equivalent practical experience
- Demonstrated leadership within a professional kitchen
- Strong food preparation and menu execution skills
- Experience managing a kitchen section
- Knowledge of food safety and hygiene requirements
- Understanding of workplace health and safety procedures
- Ability to train and support junior staff
- Strong communication and teamwork skills
