Job description
Experienced hospitality leaders are encouraged to apply for a senior kitchen position with an exciting new venue in New South Wales. This opportunity is focused on more than filling a vacancy. The successful candidate will be trusted to lead a sizeable kitchen team, influence the venue’s food identity and take responsibility for commercial kitchen performance. We are looking for a candidate whose qualifications, leadership capability and previous hospitality experience demonstrate they are ready to take ownership of a large-scale operation.
Key responsibilities
- Provide overall leadership for the kitchen operation
- Recruit and develop a high-performing kitchen team
- Manage more than 20 kitchen employees
- Plan and execute high-volume food service
- Develop modern and commercially viable menus
- Maintain food quality, consistency and presentation
- Manage food and labour budgets
- Control purchasing, stock and kitchen costs
- Build effective supplier relationships
- Monitor kitchen productivity and performance
- Maintain HACCP and food safety standards
- Ensure workplace health and safety compliance
- Work with management to achieve venue objectives
- Establish professional kitchen standards and procedures
- Lead the culinary operation through its opening and growth
Requirements
- Demonstrated senior-level kitchen leadership experience
- 2–3 years’ experience in a high-volume pub or hospitality kitchen
- Proven experience managing a large kitchen team
- Relevant commercial cookery qualifications
- Strong commercial kitchen management skills
- Experience with menu development and food costing
- Strong budgeting and cost-control capabilities
- Proven staff training and leadership experience
- Excellent communication and problem-solving skills
- Strong knowledge of food safety, HACCP and WHS
- Verifiable professional employment experience
- Ability to relocate to regional New South Wales
- Regional sponsorship is available for the successful candidate
